Gilthead Sea Bream

The Mediterranean Sea-Bream is a fish with a distinct external color of blue-silver on the dorsal side (top of the back), with sides that are silvery blue-grey. Having an oval body, the meat is white in color, firm, juicy and moist, fine-grained and is delicious grilled. It is also very low in fat. The main characteristic of the Gilthead Sea-Bream is its golden crescent like crown between its eyes.
The sea bream is a lean fish, which makes it very easy to digest. We recommend poaching, steaming or cooking in parchment to preserve the low fat in the fish. Like most fish, the sea bream is an excellent source of high quality protein and provides a considerable amount of folic acid, vitamins B9 and B12, calcium, phosphorus, iron, magnesium and potassium.
